A Good Day

Happy Thursday to you all! It's been a busy week here. We are getting ready for the big road trip. I am determined to have everything done in advance, so that the day before I won't be stressed. Think it will happen? Let's hope so!

I had a great weigh in this week -- I was down 1.4 pounds. That's over 26 lost so far. Yesterday while we were in the car, Mini-me said, "Mommy, you're getting thinner!" Indeed. Glad it's starting to show!

Ginger began crawling yesterday. She just does the commando crawl, but she is wicked fast. I am trying to baby proof, but with a little boy who loves to carry around Lego "guys," it's pretty tricky.

Gotta go iron shirts. Wish me luck!

Weight Loss Wednesday

This picture has as nothing to do with the post. It's just cute.

Between last week and this week, there has been no significant change. I am down a total of 25 pounds, which is great. This week I am refocusing my efforts to track what I eat, stay within my points, and exercise more. That should help me have a bigger number on the scale next week.

We are just two weeks away from our grand cross-country adventure. I am excited. We are going to have a great time getting out there and a great time while we're there. However, the ride home fills me with dread. We'll be tired. We'll be cranky. It will be long days in the car. But there's no way around it, I suppose. If we want to go out, we have to come back at some point. Although, moving to Sun Valley isn't such a bad idea.

Breaking my Silence

Okay, I know I've been quiet lately. But to quote my dad as told in a story by my mom: Well, I didn't have anything to say. But I do today. Joan, who designed my etsy banner, is having a giveaway on her blog. Go check out her latest creation, Kidlets. My goodness, they are so cute! I love the Kidlet plate. How cute are they?

Sew and Tell

There was a lot of this going on this week. Diet Coke makes sewing easier.
I finished the most recent JRSQA block. It reminds me of an Easter egg.
I had a custom Kindle cover order. The person who ordered it liked modern fabrics.
Then I got some stuff ready for the 4th. I made a little dress for Ginger, and then doctored some plain white t's for Mini-me and Patch. If you have a Cricut and have not yet used it to doctor a shirt, you are missing out. It's so easy, and kids love it. We are going to a breakfast tomorrow, and I have a feeling they will be a hit in their patriotic garb. They're going to wear them again on Sunday for the actual holiday.
Whew. I think I need another Diet Coke. Now go on over to Amy's blog and leave some love for the other sew and tellers!

A Recipe

I know, I know. Usually I do a "sew and tell" on Friday, and I hope to have it up by the end of the day. But I wanted to share this delish recipe that is so good you won't believe how easy it is. When I make this, I end up eating in the kitchen standing over the stove. I just can't wait that long to sit!

1-15 oz can of Black Beans, drained
1 t Ground Cumin
5 t Olive Oil (divided)
2 T Fresh Lime Juice
2 C Shredded Kohlrabi (approx 1 Bulb) or Coleslaw mix
2 Green Onions, thinly sliced
1/3 C chopped, frsh Cilantro
4 small White or Yellow Corn Tortillas
1/3 C crumbled St. Andre Cheese or Feta
Hot Sauce, if desired.

Put Black Beans and Cumin in a bowl, partially mash. Season to taste with S&P. Mix 2 t olive oil with lime juice in medium bowl. Add kohlrabi, green onions, & cilantro. Toss to coat. Season to taste with S&P.
Heat 1 T Olive Oil in a large nonstick or cast iron skillet on medium high. Add tortillas in a single layer, put bean mixture in center, cook one minute. Fold in half, cook one minute more, til golden brown. Fill with cheese and coleslaw mixture. Pass hot sauce along side. Don't eat your fingers.
